Cookies: Black Rascals
The perfect cookies: black rascals recipe with a picture and simple step-by-step instructions.
- 200 g Spelled flour type 630
- 60 g Cocoa powder
- 50 g Potato flour
- 1 pinch Salt
- 180 g Soft butter
- 200 g Raw cane sugar
- 1 piece Egg
- 1 Knife point Ground vanilla
- Orange jam
- Powdered sugar
- Mix the flour, cocoa, potato flour, vanilla and salt in a bowl.
- Mix the softened butter with the egg and sugar until frothy. Gradually add the flour mixture and work in thoroughly. The resulting dough is quite sticky.
- Wrap the dough in cling film and let it rest in the refrigerator for at least two hours.
- Roll out the dough thinly in portions (approx. 2 mm) and cut out round cookies. Put these on a tray lined with foil or paper. In every other row, cut out a small piece in the middle of the dough to make a ring.
- Bake the cookies in the preheated oven at 180 degrees for about 12 minutes.
- In the meantime, heat the orange jam slightly.
- Take the biscuits out of the tube and brush the full biscuits with a little orange jam, put on a ring and let dry a little. Fill the “hole” with orange jam and sprinkle the finished “rascals” with powdered sugar.
- The amount is sufficient for approx. 50 cookies
