Chicken strips with orange and tarragon sauce

Ingredients for 1 servings:

  • 1 chicken breast fillet(s), cut into strips
  • 1 onion(s), red, halved and cut into strips
  • 1 tbsp tomato paste
  • 250 ml orange juice
  • 50 ml cream
  • 1 tbsp tarragon, freshly chopped
  • some salt and pepper
  • some oil
  • 1 pinch(s) of sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Fry the chicken breast strips in the hot oil in a pan until lightly browned. Remove the meat from the pan and season with salt and pepper. Add the onions to the pan and let them brown. Add the tomato paste and sauté briefly. Deglaze with the orange juice and reduce slightly. Add the cream and bring back to a boil. Season with salt, pepper, tarragon, and sugar. Return the meat and simmer for about 3-4 minutes, then serve. Serve with rice and glazed carrots.
