Recycling leftovers

When I was a child, we often had leftovers, which I don’t want to withhold from you. Since there were six of us, we didn’t have meat every day, but on the weekends we had Sunday roast. Usually, we’d have boiled potatoes/dumplings or pasta left over. We would then make a “feast” with them on Monday. Slice the potatoes/dumplings. Peel and dice the onion, dice the bacon. Fry the bacon in a pan, add the onion and fry, letting it brown. Then add the potatoes/dumplings/pasta and fry until crispy. Finally, if you like, you can add eggs and let them set, or you can use a little more oil and thicken it with breadcrumbs. This was served with a sweet salad and mock cutlets/smoked and/or fresh bratwurst.
