Ingredients for 2 servings:

  • 500 g potatoes, raw
  • 1 small onion(s)
  • 1 garlic clove(s)
  • 3 tbsp natural yogurt, set
  • ½ tbsp black pepper from the mill
  • 1 egg(s)
  • Oil, neutral, e.g. rapeseed oil
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Potato pancakes, potato pancakes…..

Peel the onion and garlic, dice the onion very finely, and grate the garlic. Mix both with yogurt (or quark), pepper, and egg. Peel the potatoes and grate them finely. Then mix with the onion and yogurt mixture. DO NOT ADD SALT!!! This would draw too much liquid out of the potatoes and the batter would be too thin. Heat enough oil in a pan and add the potato mixture, tablespoon at a time, to the pan. Flatten thoroughly and fry until golden brown on both sides. Only then add salt. Serve on warmed plates with your desired side dish.
