Ingredients for 1 servings:
- 1 tbsp salt, coarse
- 1 tbsp peppercorns
- 1 tbsp juniper berries
- 1 tbsp chili
Instructions
Working time approx. 5 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 5 minutes
Roughly chop all ingredients and mix. Rub the spice mixture into one side of salmon. The spice mixture is usually too much for one side of salmon, so don’t be alarmed. To ensure the spices are evenly distributed throughout the salmon, place the prepared salmon in a large freezer bag and seal the bag tightly. The salmon can also be “turned over” in the freezer bag. Once the salmon is cooked, any coarse remnants of the spice mixture can be removed from the salmon, as no one wants to bite into juniper berries or chilies.
