Potato and endive mash à la Gabi

Ingredients for 4 servings:

  • 1 kg potatoes, floury, cooked in salted water
  • 150 ml milk, 1.5% fat
  • 100 g sour cream
  • ½ head of endive (approx. 350 g), without leaf ribs, cut into strips
  • 3 spring onions, cut into rings
  • 2 pinches of sugar
  • 2 tbsp balsamic vinegar, light
  • 1 tsp Dijon mustard
  • Salt
  • Pepper, white, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the drained potatoes in a bowl, add the milk and sour cream, mash with a potato masher, and season with pepper. Mix the lettuce strips and spring onion rings with sugar, vinegar, mustard, salt, and pepper, and fold into the mashed potatoes.
