Ingredients for 4 servings:
- 1 kg potatoes, floury, cooked in salted water
- 150 ml milk, 1.5% fat
- 100 g sour cream
- ½ head of endive (approx. 350 g), without leaf ribs, cut into strips
- 3 spring onions, cut into rings
- 2 pinches of sugar
- 2 tbsp balsamic vinegar, light
- 1 tsp Dijon mustard
- Salt
- Pepper, white, from the mill
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Place the drained potatoes in a bowl, add the milk and sour cream, mash with a potato masher, and season with pepper. Mix the lettuce strips and spring onion rings with sugar, vinegar, mustard, salt, and pepper, and fold into the mashed potatoes.
