Fried asparagus with ham in panko

Ingredients for 2 servings:

  • 12 stalk(s) asparagus
  • 12 slice(s) ham, raw or cooked
  • Flour
  • 2 eggs
  • 50 g cream
  • 200 g panko
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 14 minutes; Total time approx. 29 minutes

Peel the asparagus and pre-cook for about 5-7 minutes. Let it cool, then wrap the asparagus in the ham (you might want to brush it with a little egg to help it stick). Lightly flour everything. Beat the eggs with the cream until light and fluffy, then coat the asparagus in the flour. Then coat in panko. Breadcrumbs work, too, but panko somehow makes a nicer coating. Fry in a deep fryer preheated to 150-160°C (300-320°F) for about 4 minutes. Serve with remoulade and herbs.
