Ingredients for 2 servings:
- 8 stalk(s) asparagus, green
- 4 stalk(s) asparagus, white
- 1 liter of water
- ½ tsp sugar
- 100 g butter
- 1 tsp salt
- 4 slices of ham
- 50 g flour
- 10 g cornstarch
- 1 pinch of salt
- 1 pinch(s) of pepper
- 3 tbsp water
- Oil for frying
- 1 cup of quark (cottage cheese)
- ½ bunch chives
- 1 pinch of salt
- 1 pinch(s) of pepper
- ½ tsp lemon juice
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Mix the ingredients for the batter. Add enough water to make the batter thick. Peel the white asparagus (peeling is not necessary for green asparagus) and trim off the woody ends. Also remove the ends of the green asparagus. Add the sugar and butter to boiling salted water and add the asparagus. Cook the green asparagus for about 8 minutes and the white asparagus for about 15 minutes. Then remove the stalks and let them drain. Wrap two green asparagus stalks, each with a white asparagus stalk, tightly with a large slice of ham. Dip them in the batter and fry them in hot fat. Mix the curd cheese finely and season with salt, pepper, and a little lemon juice. Finally, stir in the chives. Arrange everything on plates and serve immediately.
