Spicy wild garlic pesto

Ingredients for 1 servings:

  • 2 bunches of wild garlic (approx. 150 – 200g)
  • 50 g Parmesan or Pecorino
  • 100 ml olive oil, good
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tbsp pine nuts
  • some lemon juice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the wild garlic thoroughly and pat dry. Chop evenly with a good-quality knife. Finely chop the pine nuts and Parmesan cheese (this whole process is also quick in the Thermomix). Place everything in a bowl and toss with the oil. Season with salt, pepper, and, if desired, a little lemon juice. If necessary, blend again with a blender or hand blender until smooth. Pour the pesto into small, sealable jars and store in the refrigerator. It tastes great with meat and pasta, as a salad dressing, with asparagus, or on a tarte flambée (why not asparagus tarte flambée? Recipe on my website!).
