Ingredients for 4 servings:
- 4 steaks (pork loin steaks) 175 g each
- 4 apricots, fresh
- 50 g sultanas
- 1 tbsp cane sugar
- 1 tbsp sea salt, coarse
- 1 tsp turmeric powder
- ¾ tsp black pepper
- ½ tsp cinnamon powder
- ½ tsp ginger powder
- 1 tsp cumin
- 1 large lemon(s), zest
- olive oil
Instructions
Working time approx. 30 minutes; Rest time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 25 minutes
from the grill
Preheat the gas grill to 150 degrees Celsius. Combine the seasoning ingredients in a small bowl. Brush the steaks lightly with oil on both sides and sprinkle evenly with the seasoning. Let it soak in for about 30 minutes. Grill the apricots cut-side down for 6-8 minutes, turning once. Then chop them up and mix with the sultanas. Grill the steaks for about 10-12 minutes, until cooked through but still slightly pink inside, turning once or twice during the cooking time. Remove from the grill and wrap in aluminum foil. Let rest for 3-5 minutes. Arrange the apricots on top of the steaks and serve warm.
