Light pea soup

Ingredients for 3 servings:

  • 600 g peas, frozen
  • 1 liter vegetable broth, instant
  • 1 small bunch of parsley
  • 1 small bunch of chives
  • 1 box of cress
  • 100 ml cream
  • Salt
  • pepper
  • 3 slices of bread

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Bring the vegetable broth to a boil, add the frozen peas, and simmer for about 10 minutes. Meanwhile, roughly chop the herbs and cress, then add them and purée the soup. Add the cream and season with salt and pepper. Serve with bread. It also tastes good without cream for an even lighter version.
