Ingredients for 4 servings:
- 1 can coconut milk
- 500 ml raspberry juice
- 300 ml pineapple juice
- 1 handful of raspberries
- 2 tbsp pineapple, in pieces
- Ice, cubed
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
Pour everything into a blender and blend until smooth. If desired, you can refine the drink with frozen raspberries or frozen pineapple chunks (regular ice cubes will also chill, but they’ll quickly dilute the drink). If you prefer a more alcoholic flavor, you can add a generous shot of white rum. If the mixture is too sweet for you, you can also add a little lemon or lime juice, but be careful with the dosage; it’s best to start small. Decoration suggestion: Dip the rim of the glasses first in egg white, then in coconut flakes. Ice cubes containing a raspberry or a piece of pineapple look particularly nice. It can also be drunk from a halved coconut. The preparation time for making the ice cubes is not included in the preparation time.
