Ingredients for 1 servings:

  • 200 g butter
  • 1 egg(s), size M
  • 75 g sugar
  • 300 g flour
  • 80 g almonds, ground
  • 1 tbsp vanilla sugar
  • 1 pinch of salt
  • 1 tsp, heaped cocoa powder
  • 1 tsp, heaped gingerbread spice, or speculatius spice
  • 50 g dark chocolate coating
  • 50 g white chocolate coating
  • ½ cup(s) plum jam

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 52 minutes

Classic Christmas cookies with fruity filling

Knead the dough ingredients into a smooth dough, wrap in cling film, and let rest in the refrigerator for one hour. Then roll out to about 3 mm thick. Using a triangular cutter (or your preferred size), cut out cookies and bake at approximately 160 degrees Celsius (convection oven) for 10-12 minutes. Let cool. This yields about 40 cookies. Spread half of them with plum jam and place the other cookie on top. Melt the chocolate coatings separately in a bain-marie, place in plastic bags, cut off a small corner, and decorate the cookies. Tip: Since the plum jam causes the cookies to become crumbly very quickly, it’s best to decorate them just before the party. It goes very quickly.
