Strawberries in champagne jelly

Ingredients for 4 servings:

  • 500 g strawberries
  • 3 tbsp sugar
  • 1 packet of vanilla sugar
  • 5 sheets of white gelatin
  • 400 ml sparkling wine
  • 250 g crème fraîche
  • 2 tbsp lemon juice

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Hull the strawberries, quarter any large ones, and mix them in a bowl with 2 tablespoons of sugar and the vanilla sugar. Soak the gelatin in cold water, squeeze it out well, dissolve it in a saucepan over low heat, and stir in the sparkling wine. Divide the strawberries among dessert glasses and top with the sparkling wine. Let it set in the refrigerator for about 2 hours. Mix the crème fraîche with the remaining sugar and lemon juice and spread it over the berries before serving.
