Ingredients for 1 servings:

  • 200 g flour
  • ½ pack of baking powder
  • 100 g butter
  • 4 tbsp water
  • 50 g sugar
  • Cheese mass:
  • 6 eggs, separated
  • 200 g sugar
  • 500 g quark
  • 600 g sour cream
  • 1 lemon(s), including juice and zest
  • 100 g flour
  • ½ pack of baking powder

Prepare the shortcrust pastry according to your preferred method and line a greased springform pan with it. Refrigerate until ready to use. For the cheese mixture, beat the egg yolks with the sugar until creamy. Gradually stir in the quark and sour cream, lemon juice, and finally the flour and baking powder. Beat the egg whites until stiff and fold in. Pour into a greased springform pan (28-30 cm) and bake at 180°C for about 1 hour. The mixture will rise quite high; this is normal! After baking, immediately turn out onto a wire rack and let cool. Then turn over and remove from the pan. The cake will now have a nice pattern on top.
