Croquettes with cheese

Ingredients for 3 servings:

  • 250 g potatoes (boiled or jacket potatoes), possibly leftovers from the previous day
  • 50 g flour
  • 30 g butter, soft or melted
  • 1 egg(s)
  • salt and pepper
  • 100 g cheese (Gouda or Edam), diced
  • possibly cooked ham, cut into small pieces
  • e.g. breadcrumbs
  • nutmeg
  • e.g. fat for frying

Working time approx. 30 minutes; Total time approx. 30 minutes

Grate the potatoes on a coarse grater or press them through a potato ricer into a bowl. Add the egg, flour, butter, and seasonings and mix well. Stir in the cheese cubes (and cooked ham, if desired). Scoop out some potato dough with a tablespoon and shape them into balls or rolls with wet hands. Coat the formed croquettes in breadcrumbs and reshape them if necessary, pressing the crumbs down slightly. Heat oil for frying and fry the croquettes in batches for about 5 minutes. Drain on kitchen paper, if necessary. When I make the croquettes with cooked ham, no one needs a “side dish.” At most, a delicious leaf salad. Tips: -Use potatoes from the day before, then the croquettes are more likely to retain their shape. -Make double the amount and freeze in a container. Then either fry again for about 5 minutes or bake in the oven at about 200°C for about 15-20 minutes. Tastes like fresh!
