Ingredients for 2 servings:
- 250 g chicken breast fillet(s)
- 1 zucchini
- 1 bell pepper(s), green
- 150 g mushrooms
- 1 onion(s)
- 1 tbsp oil
- 2 tomatoes, soft
- 1 garlic clove(s)
- ½ tsp basil
- ½ tsp oregano
- salt and pepper
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes
Dice the meat. Dice the zucchini and tomatoes, peel the bell peppers and slice them into strips. Thinly slice the peeled mushrooms. Finely dice the onion. Briefly fry the chicken and diced onion in hot oil, stirring constantly. The onion should not brown. Add the zucchini, bell peppers, and mushrooms and sauté for 2-3 minutes. Add the tomatoes and crushed garlic. Season with basil and oregano, and add a little salt and pepper. Simmer for 15 minutes at low heat, uncovered. Season again with salt and pepper. Long-grain rice is a good side dish.
