Cucumber or zucchini vegetables with minced meat

Ingredients for 2 servings:

  • 1 cucumber(s) OR:
  • 2 zucchini, or both mixed
  • 250 g minced meat, mixed, (also low-fat turkey)
  • 1 onion(s), sliced
  • Meat broth or vegetable broth
  • salt and pepper
  • possibly curry
  • possibly sour cream

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

This recipe is very simple, but also very delicious. I’ve known it as a family recipe since I was a child. Halve the cucumber and remove the seeds. Then cut the cucumber halves into slices about 1cm wide (cut the zucchini into slices). Brown the minced meat and add the onions. Make sure the meat is well cooked. Add the cucumber pieces and sauté everything. Add the stock, if desired. It should resemble a soup, but not too runny. Bring everything to a boil and simmer. Season with pepper and salt, if desired. If you like, you can also add curry or sour cream. But don’t cook it again. In my family, the cucumber mixture is eaten with rice.
