Ingredients for 2 servings:
- 350 g fish fillet(s), e.g. pollock
- ½ lemon(s)
- 3 tomatoes
- ½ bunch basil
- 2 tbsp butter, soft
- 1 tsp mustard, hot
- 2 tbsp Parmesan, freshly grated
- g breadcrumbs
- salt and pepper
- Fat, for the shape

Preheat oven to 200°C (180°C fan/convection oven). Grease two small ovenproof dishes. Rinse the fish fillet, pat dry, and remove any bones. Halve the fillet and drizzle with lemon juice. Place the tomato slices in the dish. Place one fish fillet on each and season with salt and pepper. Rinse and dry the basil, and finely chop the leaves. Mix together the butter, mustard, Parmesan, and basil. Stir in enough breadcrumbs to form a medium-thick paste. Spread this paste over the fillets and bake in the oven for about 25-30 minutes until golden brown. Serve with salad, baguette, or boiled potatoes.
