Light summer pasta salad

Ingredients for 2 servings:

  • 250 g pasta (spaghetti)
  • 1 small cup of natural yogurt
  • 3 tbsp Miracle Whip Balance
  • 3 tbsp cucumber juice
  • 3 cucumber(s) (pickles)
  • 2 tomatoes
  • ½ apple
  • ½ tsp mustard
  • ½ tsp herbal salt
  • ½ onion(s)

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cook the pasta and let it cool. Mix together the Miracle Whip, yogurt, pickle juice, and mustard. Cut the tomatoes into eighths and remove the seeds. Finely chop the onion, cucumber, tomatoes, and apple and add them to the mayonnaise. Season with salt (herb salt) and pepper, if desired. Add the pasta. It tastes particularly light on hot days, as the salad isn’t so heavy on the stomach.
