Rhubarb – Fig – Jam

Ingredients for 1 servings:

  • 125 g fig(s), dried
  • 350 g rhubarb, red
  • 1 pack of flavoring (orange peel)
  • 125 ml sherry or dry port wine
  • 500 g gelling sugar (1:1)

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

for approx. 3-4 glasses of 230 ml each

Finely dice the figs and soak them in sherry with the orange peel flavoring for 2-3 hours. Wash, trim, and, if necessary, peel the rhubarb. Cut into 2 cm pieces. Pour the figs through a sieve, reserving the liquid. Mix the figs with the rhubarb and gelling sugar, and bring to a boil. Let it simmer for 4 minutes while stirring. Remove from the heat and stir in the reserved soaking liquid. Pour into hot, rinsed twist-off jars. Close tightly and let stand, upside down, for 5 minutes.
