Ingredients for 4 servings:
- 4 chicken breasts
- 3 tbsp soy sauce
- 3 tbsp sherry
- 1 tbsp ginger, freshly grated
- 3 cloves garlic
- 1 tsp brown sugar
- 7 spring onions
- 1 large bell pepper(s), red
- 1 zucchini
- 1 carrot(s)
- 1 stalk(s) celery
- 2 tbsp oil
- 1 tbsp sesame seeds, roasted

Mix the soy sauce, sherry, ginger, garlic, sugar, and 1 tablespoon of oil in a bowl. Add the finely diced fillet and set aside. Slice the spring onions, finely slice the zucchini, carrot, and celery, and dice the bell pepper. Remove the meat from the marinade and pat dry. Reserve the marinade. Heat the oil in a pan and sauté the vegetables for 2-3 minutes, remove and set aside. Add the meat to the pan and sauté for 3-4 minutes. Add the vegetables and marinade to the meat and sauté for another 2-3 minutes, stirring constantly. Sprinkle with the toasted sesame seeds and serve.
