Ingredients for 4 servings:
- 1 kg potatoes
- 1 apple
- 1 half cucumber(s)
- ½ jar gherkins
- 1 handful of fresh herbs, e.g. parsley, wild garlic
- n. B. spring onion(s)
- n. B. Dressing, (yoghurt dressing)
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Boil the potatoes in their skins. Meanwhile, quarter the apple and cut into small pieces. Quarter the cucumber and also cut into small pieces. Chop the gherkins as well. Place everything in a large salad bowl. Peel the cooked potatoes, let them cool briefly, and then slice them. Drizzle with yogurt dressing, toss the salad, cover, and refrigerate.
