Homemade mozzarella

Ingredients for 4 servings:

  • 1 tbsp vinegar essence
  • 1 tsp salt
  • 1 liter of milk (fresh milk), 3.5%

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the fresh milk and salt to a boil, then remove from the heat. Stir in the vinegar essence; the milk will curdle immediately. Line a sieve or colander with a kitchen towel and pour in the liquid. Then, using the towel, press the mozzarella into a ball and let it cool in the whey from the sieve. The best place to store the mozzarella is in a lidded bowl. Serve with salt, pepper, balsamic vinegar, olive oil, and fresh basil. Enjoy.
