Mom's eggless omelet with oat flakes and cheese

Ingredients for 1 servings:

  • 4 tbsp oat flakes, wholegrain
  • 1 pinch of sea salt
  • 2 tbsp olive oil
  • 150 g feta cheese, diced

Instructions

Working time approx. 5 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Place the oats and salt in a small bowl, pour boiling water over them until they are completely covered, and let them swell for 15 minutes. Add the olive oil and feta cheese and mix well. Heat a nonstick pan and add the oat mixture. Reduce the heat to low and cook until crispy. Then flip the omelet and cook until crispy on the other side. Of course, you can also try Emmental or other favorite cheeses, and add herbs, mushrooms, steamed or dried vegetables, and more. Enjoy!
