Ingredients for 4 servings:

  • 200 g flour
  • 4 eggs
  • ⅛ liter milk
  • 1 pinch of salt
  • pepper
  • curry powder
  • Clarified butter
  • 400 g meat sausage
  • 1 stalk(s) leek
  • 3 bell peppers (pointed peppers)
  • 4 tomatoes
  • Salt
  • pepper
  • Oil (wild garlic oil)
  • Balsamic vinegar
  • 150 g cheese (smoked cheese)
  • 50 g cheese (Tilsiter), strong

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Mix flour, eggs, and milk to make pancake batter. Season with salt, pepper, and curry powder. Let the batter rest. In the meantime, finely slice the sausage, leek, and bell pepper. Grate the cheese. Heat clarified butter in a pan and use the batter to make 8 pancakes. Then heat the wild garlic oil. Fry the sausage strips, add the leek and bell pepper, and fry until golden brown. Finally, add the diced tomatoes and season with salt, pepper, and a dash of balsamic vinegar. Fill the pancakes with the sausage and vegetable mixture and roll them up tightly. Place the rolls seam-down in a baking dish. Spread the cheese over the rolls and place the dish in the oven. Bake at 175°C for approximately 20-25 minutes.
