Mediterranean feta dip

Ingredients for 1 servings:

  • 100 g feta cheese or shepherd’s cheese
  • 6 olives, pitted, e.g. 3 black and 3 green
  • 3 tomatoes, dried in oil
  • 1 garlic clove(s)
  • 3 tbsp olive oil
  • ½ tsp vinegar, e.g. white balsamic vinegar
  • e.g. salt and pepper
  • possibly oil for pickling the tomatoes

First, marinate the tomatoes in oil if you didn’t buy pre-marinated tomatoes. Mash the feta or goat’s cheese in a mixing bowl. Then finely chop the olives and sun-dried tomatoes, crush the garlic clove, and add everything to the feta cheese along with the olive oil and vinegar, mixing thoroughly. This works even better if you knead the mixture with your hands. Tip: Use disposable gloves or a freezer bag. Season with salt and pepper as desired. This feta dip is best prepared 1-2 days in advance so the garlic can infuse and the dip can develop a truly flavorful flavor. It goes perfectly with fresh white bread or as a side dish for brunch or barbecues.
