Ingredients for 2 servings:
- 125 g kidney beans, red
- 300 ml coconut milk
- 1 sprig(s) thyme, finely chopped, fresh
- 1 spring onion(s), finely chopped
- 250 g long grain rice
- Salt
- Pepper, fresh
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes
Place the red kidney beans in a saucepan with 180 ml of water and cook for 10 minutes. Add the coconut milk, thyme, and spring onions. Season with salt and pepper and cook for 5 minutes. Add the rice, stir, cover, and simmer gently over low heat until the rice is tender and has absorbed all the liquid. This will take about 10 minutes.
