Ingredients for 4 servings:

  • 2 kg potatoes, cooked and peeled, cut into thin slices
  • ½ liter vegetable broth, very spicy, lukewarm
  • 150 g bacon, diced
  • 3 tbsp, leveled mustard, medium hot
  • 1 tbsp sugar
  • 2 sprigs of lovage, chopped
  • some chives, cut into rolls
  • 5 tbsp vinegar
  • 7 tbsp oil
  • 1 large onion(s), chopped
  • salt and pepper

Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 2 hours 5 minutes

The best potato salad in the world

Place the sliced ​​potatoes in a lukewarm bowl, add the mustard, vinegar, oil, salt, and pepper. Boil the vegetable broth and season to taste. Brown the bacon and lightly sauté the onions. Then add the broth and bacon-onion mixture to the potatoes and mix everything together. Let stand for about an hour. Taste again and adjust the seasoning if necessary.
