Potato salad with fried bacon

Ingredients for 6 servings:

  • 3 large tomatoes
  • 1 jar cucumber(s), pickled
  • 200 g bacon, diced for frying
  • 1 onion(s)
  • ½ meat sausage
  • 1 jar Miracle Whip
  • 1 bunch of parsley
  • 1 kg potato(s), waxy
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and cut them into small pieces. Then cook them in a pot with a little salt until they are soft. Also cut the tomatoes, cucumber, onion, and sausage into small pieces and add them to a large bowl with the still-warm potato pieces. Brown the bacon in a pan and add it to the bowl with the other ingredients. Fold in the mayonnaise in any desired amount. Season the salad with vinegar, salt, pepper, and chopped parsley. A little tip: the vinegar the pickled gherkins were in can be used to season the potato salad. To give the salad a summery kick, you can also use fresh cucumber, but deseed it first.
