Potato – sausage – goulash

Ingredients for 4 servings:

  • 500 g potatoes
  • 400 g sausage
  • 2 onions
  • 1 tbsp tomato paste
  • 1 tomato(s)
  • 500 ml meat broth
  • Paprika powder, sweet and hot
  • 2 tbsp crème fraîche
  • 1 tbsp parsley
  • salt and pepper

Sauté the onions, add the sliced ​​sausage (meat sausage, wiener, etc.) and finely chopped raw potatoes, and brown them thoroughly. Sprinkle with paprika, stir briefly, and immediately pour in about 1/2 liter of meat broth. Add the tomato paste and/or 1 to 2 tomatoes, along with the spices and herbs (salt, pepper, parsley), and stir well. Add more liquid if necessary. The ingredients should just cover. Simmer until the potatoes are soft. Stir in the crème fraîche and season to taste. This is good for pre-cooking, as goulash always tastes better when reheated. If you like it a bit tangy, you can add a bay leaf and a little vinegar or gherkins to the goulash. Or try the spicy version seasoned with red and green peppers and chili. Serve with salad, fresh farmhouse bread, and a beer!
