Ingredients for 4 servings:
- 500 g carrot(s), peeled, diced
- 600 g potatoes, peeled, diced
- 2 onions, diced
- 2 tbsp oil
- 1 liter vegetable broth or meat broth
- 400 g minced beef
- 1 egg(s)
- 3 tbsp breadcrumbs
- salt and pepper
- nutmeg
- 1 tbsp chives

quick and tasty
Fry half of the diced onions in 1 tablespoon of oil. Add the carrots and potatoes, and deglaze with the stock. Cover and simmer for 15 minutes. Knead the minced meat with the remaining onions, the breadcrumbs, the egg, salt, and pepper, then form small meatballs. Fry them in a pan with the oil until well-coated, about 8 minutes. Roughly mash the carrots and potatoes, season with salt, pepper, and nutmeg. Add the meatballs, sprinkle with chives, and serve.
