Salmon with avocado, mango and wasabi

Ingredients for 5 servings:

  • 250 g smoked salmon (back fillet)
  • 2 avocados
  • 1 mango(s)
  • 1 tbsp wasabi paste
  • 150 ml cream
  • 1 lemon(s), juice
  • n. B. Food coloring, green
  • n. B. water
  • dill
  • salt and pepper

For the salmon tartare, dice the salmon fillets into small pieces. Pick off the dill tips, finely chop them, and mix them into the tartare with the juice of half a lemon. Season with salt and pepper to taste. For the avocado cream, halve the ripe avocados, remove the pits, and scoop out the flesh from the skin with a spoon. Roughly mash the flesh in a bowl with a fork. Season the avocado cream with lemon juice, salt, and pepper to taste. For the wasabi cream, whip 100 ml of cream with the wasabi paste until stiff peaks form. Add a few drops of food coloring for the desired color, if desired. For the mango cream, peel the mango and puree the flesh in a blender with 50 ml of cream and a little water.
