Cod in herb sauce

Ingredients for 4 servings:

  • 800 g cod fillet(s)
  • 50 g butter
  • 1 tbsp, heaped flour
  • 2 ½ dl milk
  • 1 tsp mustard
  • 2 ½ dl full cream
  • 1 bunch of basil
  • 1 bunch of parsley
  • 8 leaves of lemon balm
  • some dill, fresh
  • 2 cloves garlic
  • some olive oil
  • some Worcestershire sauce
  • some lemon juice
  • some salt and pepper
  • Paprika powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Melt the butter in a pan, add the flour and fry briefly. It should stay light in color. Deglaze with milk, stirring well and simmer slightly to remove the flour taste. Stir in the mustard and let it simmer. Preheat the oven to 220 degrees Celsius. Pour the cream into a bowl, add the herbs and garlic. Season lightly with salt and pepper, and puree everything well with a hand blender. Do this quickly and briefly so that the cream doesn’t turn into butter. Grease a gratin dish with olive oil. Rinse the fish with cold water, pat dry, and season with Worcestershire sauce, lemon juice, salt, pepper, and paprika. Place the fish in the oiled dish, pour the sauce over it, and bake at 220 degrees Celsius for 15 minutes. Wild rice and asparagus go very well with it.
