Ingredients for 1 servings:
- 500 g low-fat curd cheese
- 6 small eggs
- 50 g Gomasio, see note
- 100 g walnuts, chopped
- 50 g oat bran
- 50 g oat flakes, gluten-free
- 50 g flaxseed, crushed
- 75 g almonds, blanched and ground
- 2 tbsp psyllium husks
- 1 bag of baking powder
- 3 tbsp oil (MCT oil)

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Preheat oven to 180°C (top/bottom heat). Combine all ingredients in a bowl and whisk well. Pour the batter into a baking pan lined with parchment paper. Bake in the hot oven on the middle rack for 50 minutes, remove the bread from the pan, and bake for another 10 minutes. The bread should sound hollow when tapped from the back. Allow to cool before slicing. Note: Gomasio is a Japanese spice mixture made from toasted sesame seeds and a little sea salt (so no additional salt is needed).
