Hip Steak with Chanterelles

The perfect hip steak with chanterelles recipe with a picture and simple step-by-step instructions.

  • 220 g Beef rump steak
  • 300 g Fresh chanterelles
  • 2 Fresh shallots
  • 1 tbsp Clarified butter
  • Salt and pepper
  • 0,25 bunch Chives fresh
  1. Take the steaks out of the refrigerator for about 1 hour.
  2. Preheat the oven to 150 degrees (fan oven 130 degrees). Clean the chanterelles. Cut the shallots into thin rings.
  3. Heat the butter lard in a pan, sear the steaks on each side. Place the meat on a plate and finish cooking in the hot oven in the lower third for 5-7.
  4. Fry the chanterelles vigorously in the hot frying fat. Add the shallots and fry for 4-6 minutes. Season with salt and pepper. Cut the chives into rolls.
  5. Season the meat with salt and pepper. Sprinkle the chanterelles with chives and serve with the steaks. If you like, eat a leafy salad with it.
