Hip Steak with Chanterelles

- 220 g Beef rump steak
- 300 g Fresh chanterelles
- 2 Fresh shallots
- 1 tbsp Clarified butter
- Salt and pepper
- 0,25 bunch Chives fresh
- Take the steaks out of the refrigerator for about 1 hour.
- Preheat the oven to 150 degrees (fan oven 130 degrees). Clean the chanterelles. Cut the shallots into thin rings.
- Heat the butter lard in a pan, sear the steaks on each side. Place the meat on a plate and finish cooking in the hot oven in the lower third for 5-7.
- Fry the chanterelles vigorously in the hot frying fat. Add the shallots and fry for 4-6 minutes. Season with salt and pepper. Cut the chives into rolls.
- Season the meat with salt and pepper. Sprinkle the chanterelles with chives and serve with the steaks. If you like, eat a leafy salad with it.
