Turkey Escalope Alla Milanese

The perfect turkey escalope alla milanese recipe with a picture and simple step-by-step instructions.

Tomato sauce:

  • 1 Onion approx. 100 g
  • 2 Garlic cloves
  • 1 tbsp Tomato paste
  • 2 tbsp Sunflower oil
  • 1 Can Tomatoes finely chopped 400 g
  • 100 ml Water
  • 1 tbsp Rubbed oregano
  • 4 big pinches Coarse sea salt from the mill
  • 4 big pinches Colorful pepper from the mill
  • 1 tsp Sugar

Turkey schnitzel and zucchini:

  • 500 g Turkey schnitzel / 4 pieces of 125 g each
  • Coarse sea salt from the mill
  • Colorful pepper from the mill
  • 2 tbsp Sunflower oil
  • 1 Zucchini approx. 300 g

Parmesan egg milk:

  • 80 g Freshly grated Parmesan
  • 2 Eggs
  • 50 ml Milk
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill

Turkey schnitzel a la Milanese:

  • 4 Casserole dishes

Serve:

  • 4 sharpen Basil for garnish
  • Possibly baguette

Tomato sauce:

  1. Peel and dice the onion. Peel and finely dice the garlic. Heat sunflower oil (2 tbsp) in a medium-sized saucepan and fry the onion cubes with the garlic clove cubes in them, add tomato paste (1 tbsp) and fry with them. Deglaze / pour in the tomatoes finely chopped (400 ml) and water (100 ml) and rubbed with oregano (1 tbsp), coarse sea salt from the mill (4 big pinches), colored pepper from the mill (4 big pinches) and sugar (1 teaspoon) season. Let everything simmer / boil for about 10 minutes. Stir it again and again.

Turkey schnitzel and zucchini:

  1. Wash turkey escalope, pat dry with kitchen paper, cut in half, season with plenty of salt and pepper, fry vigorously on both sides in a pan with sunflower oil (2 tbsp) and divide in 4 casserole dishes. Wash the zucchini and cut into slices (approx. 24 pieces). Fry both sides in the roasting fat and distribute in the casserole dishes.

Parmesan egg milk:

  1. Grate the Parmesan freshly (approx. 80 – 100 g) and whisk with the milk (50 ml) and the two eggs.

Turkey schnitzel a la Milanese:

  1. Spread the prepared tomato sauce over the 4 casserole dishes, drizzle the Parmesan-egg-milk over them and bake in the preheated oven at 200 ° C for about 15-20 minutes.

Serve:

  1. Garnish the turkey schnitzel a la Milanese with basil and serve hot. Baguette may be enough with it.
