Fried French Black Pudding with Antilles Spices and Fried Scallop

  • 5 Pc. French blood sausages with Antilles spices
  • 5 Pc. Scallops
  • 5 kl. Boskoop apples
  • 25 g Ginger
  • 100 g Fine sugar
  • 20 g Butter
  • 1 tbsp Breadcrumbs
  • 15 Pc. Chilli threads
  1. Peel and core the apples and cut into small cubes. Peel and finely chop the ginger and mix with the diced apple.
  2. Heat the pan, add sugar and butter to the pan and caramelize the apple and ginger mixture.
  3. Salt the scallops a little and dust with breadcrumbs. Heat oil in another pan and fry scallops and black pudding in it.
  4. Sprinkle the scallops with chilli threads on a plate and serve with black pudding and ginger apple.
