Fried French Black Pudding with Antilles Spices and Fried Scallop

- 5 Pc. French blood sausages with Antilles spices
- 5 Pc. Scallops
- 5 kl. Boskoop apples
- 25 g Ginger
- 100 g Fine sugar
- 20 g Butter
- 1 tbsp Breadcrumbs
- 15 Pc. Chilli threads
- Peel and core the apples and cut into small cubes. Peel and finely chop the ginger and mix with the diced apple.
- Heat the pan, add sugar and butter to the pan and caramelize the apple and ginger mixture.
- Salt the scallops a little and dust with breadcrumbs. Heat oil in another pan and fry scallops and black pudding in it.
- Sprinkle the scallops with chilli threads on a plate and serve with black pudding and ginger apple.
