Pancakes with Smoked Salmon Filling

The perfect pancakes with smoked salmon filling recipe with a picture and simple step-by-step instructions.

Pancake batter

  • 5 whole Eggs
  • 500 ml Almond milk
  • 250 g Cornmeal
  • 1 pinch Salt
  • 1 pinch Sugar

Dill sauce

  • 100 ml Soy Cuisine
  • 100 ml Soy yogurt
  • 2 tablespoon Dill
  • 1 teaspoon White balsamic vinegar
  • 1 teaspoon Hot & sweet chili sauce
  • 1 teaspoon Ume su
  • 1 Splash Lemon juice
  • 1 Splash Salt and pepper

anything else

  • 300 g Smoked salmon
  • 300 g Oil for the pan

Prepare the pancake batter

  1. Beat the eggs together with the almond milk (who can use normal milk) and the corn flour (who can use normal wheat flour) with the mixer – add salt and sugar and mix everything well again – let the pancake dough swell for at least 1 hour – if it is too plump afterwards, it is diluted with a little mineral water

Prepare the dill sauce

  1. Mix the soy cuisine (or creme fraiche) together with the soy yoghurt (or normal yoghurt) and all the ingredients and spices listed – season again to your own taste and then set aside

Pancakes completion

  1. Pour a thin layer of pancake batter into a pan brushed with oil – first bake the pancakes on one side – then turn it over – the now top baked side is thinly coated with the dill sauce in the pan immediately after turning and with the smoked salmon pieces topped – this warms up the filling (while the 2nd side of the pancakes is baking) – after baking, the pancakes are rolled up and kept warm in the oven until all the pancakes are baked
  2. Serve the rest of the dill sauce together with the smoked salmon pancakes on preheated plates – a refreshing cucumber salad and a glass of white wine go very well with it
