  • 100 g Liquid butter
  • 1 Red Chilli, finely chopped
  • 1 Garlic clove, finely grated
  • Black pepper from the mill
  • Salt
  • 50 g Grated mountain cheese

Spicy chicken legs

  1. Put the softened butter in a bowl. Add the lime zest, the juice and the grated garlic, also the herbs and then season with pepper, salt and Espelette pepper. Mix everything well with a fork.
  2. On the chicken thighs, loosen the skin from the edge at one point and then run your finger under the skin and loosen the skin from the meat over a large area, without loosening the remaining edge from the meat. Now put some of the butter in the pocket and, applying pressure from the outside, distribute the butter well under the skin.
  3. Put some olive oil in an ovenproof dish and put the chicken legs in it and rub the remaining butter on the outside and then fry in the oven at 180 degrees for about 45 – 50 minutes. The meat is when clear liquid oozes out when one pricks into it.

spicy fan potatoes

  1. Peel the potatoes and then cut them in a fan shape, but so that they stay together at the bottom. Then put the potatoes in an ovenproof dish.
  2. Season the liquid butter with the chilli, garlic and enough salt and pepper and stir well. Now spoon the butter over the potatoes, making sure that some of the liquid runs into the cuts. Then bake in the oven at 180 degrees for 40 minutes, then put the mountain cheese on the potatoes and bake for another 20 minutes.

finish

  1. Arrange the chicken legs with the potatoes, a cucumber salad or a mixed leaf salad -. what tastes good is allowed. 😉
