Pak Choi Noodles

The perfect pak choi noodles recipe with a picture and simple step-by-step instructions.

  • 200 g Pak Choi mustard cabbage
  • 1 Red chilli pepper
  • 2 Garlic cloves
  • 2 Anchovy fillets in oil
  • 1 tbsp Sunflower seeds
  • 2 tbsp Rapeseed oil
  • Pepper from the grinder
  • 200 g Pasta
  • Salt
  1. Wash the pak choi thoroughly, shake dry and quarter lengthways. Core the chilli pepper as required and cut into thin slices. Cut the garlic cloves into large pieces. Drain the anchovies and cut small pieces.
  2. Roast the sunflower seeds in a pan without fat until golden brown and allow to cool on a plate. Add the oil to the pan, fry the pak choi in it and place on a plate. Sauté the chili and garlic in the oil over medium heat until soft. Add pak choi and season with pepper.
  3. Cook the pasta in plenty of boiling salted water according to the instructions on the packet. Drain and drain the pasta, collecting 50 ml of pasta water.
  4. Add the noodles, anchovies and pasta water to the pak choi in the pan and mix. Season with pepper and a little salt and serve sprinkled with the roasted sunflower seeds.
