Leftover Plate …

The perfect leftover plate … recipe with a picture and simple step-by-step instructions.

For the fried potatoes:

  • 5 Potatoes from the previous day
  • 2 tablespoon Extra virgin olive oil
  • 1 Chopped onion
  • 1 tablespoon Ham cubes

Also:

For the Turkish paprika:

  • 5 fully ripe turkish Hot pepper
  • 1 tablespoon Olive oil for frying
  • 1 tablespoon Water
  • 1 tablespoon Fleur de Sel sea salt
  • 1 kl. Glass Jelly, homemade
  • 1 kl. Glass Gherkins pickles
  • 4 small Tomatoes
  1. Leftovers always accumulate and need to be processed. Who does not know that? So, to work: peel the potatoes from the day before and cut them into small slices. Fry them gently in the heated oil, add the onion cubes and ham cubes and continue to sizzle until everything has the desired color. Only now season with salt and pepper.
  2. Halve the peppers lengthways and cut out the white skins with the seeds, then cut the pods into finger-length pieces. Fry in heated olive oil (covered with a lid) until they start to brown, then add a tablespoon of water and continue to fry with the lid on until the liquid has evaporated. Sprinkle with fleur de sel before serving.
  3. Arrange the fried potatoes with paprika and jelly from the jar. I added a few gherkins and tomatoes … everything that just needed to be eaten.
  4. Note 4: I made the spicy aspic from my stock myself, I will publish the recipe separately later.
