Eggs in Mashed Potato Nest

The perfect eggs in mashed potato nest recipe with a picture and simple step-by-step instructions.

  • 1 kg Floury potatoes
  • Salt
  • 250 g Asparagus green
  • 2 tbsp Olive oil
  • 3 tbsp Butter
  • Pepper
  • 6 tbsp Whipped cream
  • Freshly grated nutmeg
  • 4 Eggs
  • 60 g Bacon slices
  • 30 g Finely grated mountain cheese
  1. Peel and quarter the potatoes. Cover and cook in boiling salted water for 20-25 minutes. Drain the potatoes, add the remaining butter and cream, coarsely mash, season with salt, pepper and nutmeg.
  2. Spread the mashed potatoes into a baking dish. Use a tablespoon to make 4 deep hollows in the puree.
  3. Peel the asparagus in the lower third, cut off the ends and cut the stalks into pieces about 3cm long. Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a pan and fry the asparagus pieces for 3-4 minutes. Set the oven to 200 degrees (convection 180 degrees) , preheat.
  4. Open the eggs and place directly in the hollows. Distribute the asparagus pieces over the puree. Roughly tear the bacon slices over the puree and asparagus. Sprinkle everything with salt and pepper. Pour mountain cheese over the top. Drizzle with the remaining olive oil. Bake in the hot oven on the middle rack for 15-20 minutes. And serve hot.
