Lemon Poppy Seed Blini with Banana and Maple Syrup

The perfect lemon poppy seed blini with banana and maple syrup recipe with a picture and simple step-by-step instructions.

For the dough:

  • 375 g Spelled flour type 630
  • 65 g Steam poppy
  • 30 g Yeast fresh
  • 375 g Milk
  • 120 g Sugar
  • 1,5 pinch Salt
  • 1,5 Pc. Organic lemons
  • 3 Pc. Organic eggs
  • 4 tbsp Rapeseed oil
  • 5 Pc. Bananas
  • 2 tbsp Lemon juice
  • 150 ml Maple syrup

For the dough:

  1. Put the flour and poppy seeds in a bowl and make a well in the middle. Chop up the yeast and place in the well. Warm milk to lukewarm and pour 6 tablespoons and 3 teaspoons of sugar into the hollow. Mix the yeast with the milk, sugar and a little flour from the edge of the bowl (approx. 4 tablespoons) to form a pre-dough. Then cover the bowl with a clean cloth and let it rise in the heat for about 10 minutes. Rinse the lemon with hot water and rub the peel. Add the rest of the milk, sugar, eggs, salt and lemon zest to your advantage and stir to form a smooth batter. Then cover again in a warm place for 30 minutes. Heat a little oil in portions in a pan and remove small particles from the dough. Bake about 20 blinis one after the other over medium heat. The blinis must not touch each other in the pan. Bake until the blinis are golden yellow and then keep warm in the oven. Peel and puree the bananas and add the lemon juice. Serve the blinis with the banana puree and maple syrup.
