Squid Rings in Red Sauce
The perfect squid rings in red sauce recipe with a picture and simple step-by-step instructions.
- 5 medium sized Tomatoes
- 2 Chili peppers
- 2 Garlic cloves
- 2 cm Fresh ginger
- 1 tbsp Oil
- 1 tsp Mustard seeds
- 10 Curry leaves
- 1 tsp Ground cumin
- 1 tsp Ground turmeric spice
- 1 tbsp Tomato paste
- Salt
- Sugar
- 225 g Squid tubes
- 0,25 bunch Fresh coriander
- Put the tomatoes briefly in boiling water, peel off the skin and cut off the stem end. Cut the tomatoes into small pieces.
- Cut the squid tubes into rings. Peel the ginger and cut into small pieces. Garlic cloves (were soaked in olive oil and mint), cut into small cubes. Cut the chili peppers into small pieces.
- Heat the oil in a pan and pop the mustard seeds in it. Add the chilli, curry leaves, garlic and ginger and simmer for 2-3 minutes while stirring. Stir in the tomato paste and the ground spices with 2 tablespoons of water and simmer for 2 minutes.
- Add the tomato pieces and simmer for another 2 minutes. Season with salt and sugar and simmer for about 15 minutes until the sauce thickens. Add the squid rings to the sauce and simmer gently for 2-3 minutes.
- Pluck the coriander leaves from the stalks and roughly chop. Spread squid rings in red sauce on plates and sprinkle with coriander and serve. We had wild basmati rice with it.
