Squid Rings with Caper Dip

Ingredients
 

  • 2 Hard-Boiled eggs
  • 4 tbsp Olive oil
  • 50 g Pickles
  • 1 Spring onion
  • 1 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tbsp Capers
  • 2 tbsp Frozen parsley
  • 1 pinch Sugar
  • Salt pepper
  • 250 g Squid rings in batter

Instructions
 

  • Peel the eggs, cut in half lengthways and mash the yolks in a bowl. Mix well with the olive oil.
  • Finely chop the egg whites and pickles. Cut the spring onion into fine rings. Stir in vinegar, mustard, parsley, capers, salt, pepper and sugar. Finally stir the whole mixture into the egg yolks. If necessary, add spices to taste.
  • Prepare the squid rings in the oven or pan according to the instructions on the package and then serve with the caper dip.
