Aioli
The perfect aioli à la biggi recipe with a picture and simple step-by-step instructions.

- Medium hot mustard
- Sugar
- Medium sized eggs
- Cloves of garlic or
I also like to use garden garlic
- Olive oil
- Lime juice
- For spices
- Salt and pepper from the mill
- For the aïoli, first mix the mustard and sugar.
- Separate the eggs. Peel the garlic and chop it very finely.
- Add the egg yolks to the mustard and stir again.
- First add the oil drop by drop, whisking constantly with the whisk, then pour the oil in a fine stream and pull it under the mass until it becomes thick.
- Now add the lime juice and garlic. Season to taste with salt and pepper.
