  • Medium hot mustard
  • Sugar
  • Medium sized eggs
  • Cloves of garlic or

I also like to use garden garlic

  • Olive oil
  • Lime juice
  • For spices
  • Salt and pepper from the mill
  1. For the aïoli, first mix the mustard and sugar.
  2. Separate the eggs. Peel the garlic and chop it very finely.
  3. Add the egg yolks to the mustard and stir again.
  4. First add the oil drop by drop, whisking constantly with the whisk, then pour the oil in a fine stream and pull it under the mass until it becomes thick.
  5. Now add the lime juice and garlic. Season to taste with salt and pepper.
