Asparagus Gratin

  • 1 Shallot
  • 1 tsp Butter
  • 250 g Asparagus green fresh
  • 250 g Asparagus white fresh
  • 1 tbsp Butter
  • 150 g Sour cream
  • 2 Eggs
  • 1 Fresh tomato
  • Salt
  • Pepper from the grinder
  • 200 g Mozzarella
  • 1 tbsp Butter
  1. Wash the asparagus, remove the dry ends. Peel the white asparagus whole, the green asparagus in the middle third. Peel the shallot and cut into small cubes. Wash the tomato, remove the stalk and cut the tomato into thin slices. Slice the mozzarella to cut.
  2. Braise the shallot cubes in the heated butter (1 teaspoon). Mix the sour cream with the eggs, add the steamed shallot cubes and season with salt and pepper.
  3. Spread the tomatoes and asparagus in a casserole dish with 1 tablespoon of butter. Pour the egg mixture over the vegetables.
  4. Spread the mozzarella slices over the vegetables. Bake in the preheated oven at 200 ° C for about 45 minutes.
